Phil Howard

Elystan Street, NOTTO

At HG Walter, we’ve had the pleasure of working with Phil Howard for many years, building a relationship based on trust, quality, and a shared commitment to excellence. From supplying top-quality meat to his renowned restaurants to collaborating on his OTTO pasta boxes during lockdown, it’s always a pleasure working with Phil.

About Phil:

Phil Howard, co-owner and chef patron of Elystan Street in Chelsea, is a celebrated figure in the culinary world, known for his refined and contemporary approach to modern European cuisine. His journey from microbiology graduate to Michelin-starred chef is a testament to his passion and dedication to the craft.

Phil's culinary career began in 1988 when he joined Roux Restaurants, choosing the kitchen over a career in microbiology after completing his degree at the University of Kent. He further honed his skills under the mentorship of Marco Pierre White at Harvey's and Simon Hopkinson at Bibendum. In 1991, Phil co-founded The Square, where he remained at the helm for 25 years, earning two Michelin stars and widespread acclaim for his innovative dishes.

In 2016, Phil opened Elystan Street, aiming to offer high-quality cooking in a relaxed, welcoming environment. The restaurant quickly garnered praise, earning a Michelin star within its first year. His talent for balancing flavour with simplicity and sophistication has made Elystan Street a cherished spot in London’s dining scene.

Beyond Elystan Street, Phil is involved in several esteemed establishments, including Kitchen W8, Church Road, Perilla, Lorne, and UNION in the French Alps. He is also a co-founder of NOTTO, an innovative pasta venture that supplies fresh pasta and sauces to restaurants and retailers and has recently opened its first restaurant.

Phil’s passion for quality extends beyond his own kitchens. His longstanding partnership with HG Walter is a reflection of our shared values. As Phil puts it:

“To state that the success of HG Walter is all about the quality of their meat is just not quite the whole story. And yes, the meat is exceptional, ethically sourced and it really is about as good as it gets - and often better! The story is really about the people…. the family. There are good people in this world, and then there are really good people. Team HGW (or the Heanen family - as you wish) are just that - mighty fine people who care about the important things in their business - the quality of their product, their service, and the satisfaction of their customers. They are the real deal. Top folk and top butchers.”

We’re incredibly proud of our relationship with Phil and grateful for the opportunity to support his culinary ventures with produce that meets his exacting standards. Working with chefs like Phil inspires us every day to maintain the quality, service, and family values that HG Walter is built on.
