At various stages in the new season, we source our venison from the Royal Windsor Park in Berkshire and from Willo Game in Shropshire, both trusted suppliers known for high-quality, sustainable wild game. They prioritise ethical sourcing, ensuring the deer forage naturally on grasses and nuts with minimal human interference, making them a sustainable meat option. Red and fallow deer are available all year except May through July, while roe deer are in season year-round. Each animal is hand-picked for us to ensure the highest levels of flavour and tenderness. Game is handled with precision and traceability, adhering to ethical hunting practices and legal restrictions.
