Indulge in these fall-apart BBQ meaty pork ribs, a real winner of a recipe this BBQ season. Pair with smoky bacon beans for the ultimate recipe to impress.
Meaty Pork Ribs with BBQ beans

Ingredients

  • 4 meaty pork ribs
  • Salt & pepper/dry rub of choice
  • 2 jars of white beans (butterbeans, chickpeas or white beans)
  • 1 large red onion – finely diced
  • 100g sliced smoked streaky bacon – chopped
  • 2 tsp smoked sweet paprika
  • 1 tsp chilli flakes
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cracked black pepper
  • 2 tsp tomato puree
  • 100ml maple syrup/honey
  • 50ml red wine vinegar
  • 50ml soy sauce
  • 1 lime – cut into wedges
  • A few spring onions – sliced at an angle
  • 1 red chilli – sliced at an angle

For the Ribs:


The ribs will take 1.5-2 hours to cook so get them on first. Best cooked on the BBQ but this can easily be done in an oven.

Set your BBQ or oven to 140°C. Liberally season the ribs on all sides. Place on a rack and insert into the BBQ or oven. Check the ribs after 1.5 hours (the beans can now be prepared whilst the ribs are cooking).

After 1.5 hours the meat should be tender enough that you could pull it from the bone. Remove from the heat, cover with foil and turn the heat up to 180°C.

Give the ribs another 10 minutes at 180°C just before serving to bring them back to temperature and add some colour to the exterior of the meat.

For the BBQ beans:

In a saucepan, cook the bacon over medium heat until the fat renders, without adding too much colour.

Add the diced onion, and sweat for a few minutes until softened. Add the paprika and chilli flakes and cook for 1 minute. Add in the tomato puree, maple syrup/honey, soy and 100ml of water. Bring to the boil.

Add the remaining ingredients (except beans), turn the heat down and simmer for 10-15 minutes until reduced to a thick, BBQ sauce-like consistency. Stir in the beans and warm through just before serving.

Divide between 4 plates, top with the pork rib and garnish with a wedge of lime, freshly cut chilli and spring onion.
